Our Greenhills Natural beef eye fillet is the leanest and most tender of all the meat.
These beautifully cut steaks are best seared over high heat and served rare to medium-rare.

Our Greenhills Natural scotch fillet steak is regarded by many as the most flavoursome steak cut. This is due to the middle seam of fat marbling which significantly enhances the flavour and texture of the meat during cooking. Whether you like your steak rare, medium or well done, scotch fillet is best cooked on the BBQ or pan-fried. Cook for around 3 mins each side for rare and 4 mins each side for medium.

Our Greenhills Natural T-Bone steak is a firm favourite amongst meat lovers. It contains the porterhouse steak on the bone as well as the eye fillet. This steak is generous and full of flavour.

Ossobuco or osso buco is Italian for "bone with a hole" (osso "bone", buco "hole"), a reference to the marrow hole at the centre of the cross-cut veal shank. The shanks are cut into thick ‘steaks’ and braised in vegetables, white wine and broth to make the famous dish. The shanks are incredibly hard working muscles and therefore are very tough until braised for a long time.
In Australia, we often refer to this particular cut by the name of the dish itself - Osso Buco.
This cut is from the top of the shin which has a higher proportion of bone to meat than other meaty cuts of veal. The shank is then cross-cut into sections about 3 cm thick. The marrow found in the hole in the bone, a prized delicacy, is a feature of this dish.
Cooking Suggestion - Osso Bucco is best slow-cooked or braised so that the meat has time to tenderise. We recommend browning it first until caramelised to impart as much flavour into your dish as possible, and then slow-cooking until fork-tender.

One of the most impressive cuts - the Thor’s Hammer is actually a whole beef shin (or shank) with the top of the bone french trimmed so that it stands high. Being a marrow bone, when slow roasted, the marrow will run down into the dish creating a rich beautiful beef dish.
Essentially, a whole ossobuco, this spectacular cut lends itself to low, slow cooking, allowing the connective tissues to break down and become incredibly tender.

One of the most versatile cuts, our Greenhills Natural rump is full of flavour. As the name suggests, it is from the backside of the cow so it is a hard-working muscle. Whilst not as tender as Scotch or Sirloin, it makes up for it with bangs of flavour.

This is prime grass-fed brisket from our very own "Beyond Free Range" Greenhill Farm. It comes from the lower breast or pectoral muscles of a cow. Because this area is so well-exercised, it makes for quite a tough piece of meat full of connective tissue. This is why it's best suited for low and slow cooking. They are ideal in the slow cooker, and if you have a pressure cooker, you can cook brisket recipes in a fraction of the time.

These are prime grass-fed beef cheek steaks from our very own "Beyond Free Range" Greenhill Farm. These are the muscle cheeks and as such are a hard-working muscle that needs plenty of time to achieve its rich flavour and falling-apart texture. They are ideal in the slow cooker, where they can easily take the place of brisket in some of your favourite recipes. If you have a pressure cooker, you can cook beef cheeks in a fraction of the time.

Our Greenhills Natural rib-eye roast is the true entertainer’s roast.
Essentially, the scotch fillet but on the bone, it has fat running through the middle of the meat which makes for magnificent flavour. As a roast, this retains a lot of moisture making it very succulent.

Our Greenhills Natural porterhouse steak is one of our most popular cuts of steak.
It's also known as Sirloin Steak or Striploin. The boneless strip is less heavy on the plate and easy to cut. It is best grilled, pan-seared, or pan-roasted and is ideal for a BBQ.

We slice off the very top muscle that isn’t used as much, so it is not only as tasty as rump but is also very tender with a thick layer of fat that flavours and moistens the meat as it roasts. Our beautiful beyond free-range Green Hills Natural beef is expertly brined. Also known as silverside - we make our corned beef using topside so it is leaner but requires long slow cooking.

These full-length beef short ribs aren’t actually short! Commonly referred to as Beef Short Ribs or Plate Short Ribs, these are the ribs that are incredible smoked. They are long, melt in your mouth tender, with brisket like ribs. Plate ribs are the biggest and beefiest ribs out there, and similar to beef brisket in fat content, they need to be cooked at a low and slow temperature to render the fat down without drying out the meat.
Sold by the kilo, the number of ribs per kilo varies because of the weight of the bones. Depending on the recipe, one kilo of ribs will feed 2 people.

Chuck Short Ribs are essentially the Plate Short Ribs cut in half to make them a little more manageable.
These are the ones very popular in Korean style barbecue and many Asian dishes including our own Beef Rendang. These can also be cooked on a smoker, similar to how you would cook plate ribs but just for less time.

The word asado takes its origin from the Spanish word asar, meaning ‘to grill’. More specifically, it refers to Argentinian barbecue. As opposed to traditional short ribs, these are cut across the bone for extra flavour and assist in the rendering process.

Cooking Tip
These ribs are fantastic on a BBQ. Simply dry with a paper towel before sprinkling all sides with good-quality salt before putting on a lightly oiled, preheated grill (wood or charcoal is best). Don’t crowd them. Give them plenty of space. Leave them untouched and uncovered for 4-6 minutes until the bottom is browned and they “release” from the grill. Flip and again, make sure they don’t touch so they get the best crust. Cook for a further 2-3 minutes. Remove and rest for 10 minutes. Serve whole or cut into pieces on the diagonal. Serve with chimichurri or your favourite green sauce.
Chuck steak is cut from the neck of the animal and has a great flavour. It is a tougher cut of beef so best braised or slow-cooked. Sear on high heat first to caramelise and bring out all the flavours before slow cooking until tender.
