Our Greenhills Natural whole lamb leg is a bone-in cut, which ensure maximum flavour retention during cooking, resulting in a succulent, melt-in-your-mouth experience.

The same cut as a T-Bone, our Greenhills Natural lamb loin chops contain the loin and fillet either side of the central bone with a layer of fat running down one side. For best results, cook fat side down to render it before grilling quickly to medium-rare. Perfect for BBQs and always very tender.

Bone is out but flavour is in! We butterfly the leg of lamb (remove the bone) so you have a prime cut that will cook evenly and quickly. These are perfect for marinating as the marinade gets into all the nooks and crannies. You can purchase plain, or with one of our own marinades - either a greek or mint & rosemary. These are absolutely perfect for stress-free cooking.
Great for cooking on the BBQ quickly, or you can wrap in foil and slow cook for a less fatty and leaner option to lamb shoulder.

The most flavoursome of the lamb chops from the shoulder. Our Greenhills Natural lamb forequarter chops are great on the BBQ, delicious marinated and they are also the ideal chop for slow roasting, braising and casseroles.

Greenhills Natural lamb shoulder is probably one of the most versatile cuts you can get. Perfect for slow roasting in the oven, smoker, or BBQ, this cut will be incredibly flavoursome and tender. Any leftovers are ideal in salads, sliders, pies and even ragu.
For easier carving and slightly less cooking time, choose the boneless option. Boneless shoulder is also perfect for curries and casseroles when you are looking for deep flavour.

Expertly butchered and vacuum sealed so they will keep for weeks in the fridge or you can pop straight into the freezer without risk of freezer burn.
Our Greenhills Natural crumbed cutlets have the most amazing flavour when they grilled in a pan with oil until the crumbs are golden brown. Add a small amount of butter for extra flavour and colour. Make sure to keep the pan temperature on low-medium so the crumb doesn’t burn (or for a completely fuss-free dinner, pop in oven around 180º)

Lamb shanks are perfect for braising, stews and soups. Being a hard working muscle, lamb shanks need to be cooked low and slow but they are a rich and very tender meat once cooked properly.
You can choose to have them natural (soups and stews) or frenched where we trim and clean the bone for presentation.
Our Greenhills Natural lamb backstrap is essentially the rack or loin off the bone. It is lean and amazingly tender, with a lovely subtle flavour. The backstrap is perfect for a quick cook on the grill to rare or medium-rare and then sliced.
