We slice off the very top muscle of the rump that is the one muscle that isn’t used much so it is not only as tasty as rump but is also very tender with a thick layer of fat that flavours and moistens the meat as it roasts. Rump cap makes a tender roast, or you can slice it against the grain for petite steaks and tender stir-fry strips.
