We hand make over 20 different varieties of sausage specialising in pork sausages made to herbs and spices blended in house to our own recipe. We are known for our authentic local delicacy the spicy, garlic-infused Bull Boar Sausage.
For our mince, we start with topside beef and mince it fresh daily. Our mince is lean and perfect for your own home cooking. It is proudly preservative-free so it is important to use within 24 hours or to freeze it.
Our big hearty burgers are made in-house and packed with onions and carrot and our own blend of spices and herbs. Easy to cook they are a favourite with local families.
Quality mince from our own “beyond free-range” Greenhills Natural lamb. Perfect for koftas, shepherds pie and much more.

Free-range chicken mince is the essential ingredient in many SE Asian dishes. We love it!
Due to the nature of chicken, we always freeze our chicken mince as soon as we mince it to keep it fresh. It will be delivered frozen. Defrost and use within 48 hours or freeze for up to 3 months (for optimal flavour)

Hepburn Shire region is famous for its bullboar sausages and it’s not often that butchers outside of our region produce them. The Swiss-Italians settled our region in the 1850s during the Gold Rush and each family often had their own highly guarded secret recipe. Our bullboars are made in the traditional manner and are a mixture of our Greenhills Natural Beef, free-range Otway Pork, red wine, garlic and spices. And yes, our recipe is also secret but we know you will love them - but they aren’t always what people expect at a BBQ. We recommend you place in cold water and bring to the boil. Reduce and simmer for about 4 minutes. Remove, cool a little, slice and fry and enjoy with a glass of red. Or you can add them to salads. We also love squeezing out the sausage to make a beautiful ragu for gnocchi.
