The angled knife holder comes with 15 and 20-degree angles to hold your knife in place. The 15º is for harder Japanese or specialty steels for a really razor-sharp edge. The 20º angle is for softer Western-style knives for longer durability.

Each rolling sharpener comes prefit with a 400# Diamond Grinding Disc and a 1000# Diamond Honing Disc.

Additional Disc Upgrade:

Get two additional 2-discs - a 240# Diamond Grinding Disc and a 1500# Diamond Honing Disc to achieve even better results.

Please note - we don’t use these in-store - our butchers are experts at using steels and whetstones and we strongly recommend to get your good kitchen knives professionally sharpened every 6-12 months. But these rolling sharpeners are perfect to use whenever they feel the edge is starting to dull.
