One of Spa Country’s best restaurants, Sault Restaurant is set on a spectacular 125-acre estate with fields of lavender, seasonal sunflowers and a kitchen garden that is the envy of restaurants everywhere. Sault is one of the most photographed restaurants in the country, but more importantly, it also delivers food to match. They have been using our produce for years and it is always such a delight to see the new menu each season and what dishes will feature our produce. Always paired beautifully with produce from their own garden, they take the ethos of paddock to plate to the next level.

Pictured here is a beautiful dish of our very own eye fillet served with carrot, rocket, smoked garlic butter and red wine jus. We can’t imagine a better way to show off our beef that has been raised on our own farm.

This is the prized roast of all beef. Our Greenhills Natural Whole Eye Fillet roast is an absolute joy to cook.

The eye fillet is a muscle that doesn’t do a lot of hard work. As such, it is incredibly tender and very lean with a delicate beef flavour. It can be roasted whole for a truly marvellous dish, as a Beef Wellington or even sliced paper-thin for beef carpaccio.
