A very special collaboration with Oakwood and Daylesford Meat Co

Once again, we have again teamed up with award-winning German-born charcutier and smallgoods maker, Ralf Fink from Oakwood Smallgoods, to make our special smoked hams. Using our much-loved free-range Otway pork, Ralf brines them in a special mix of salt, sugar and rich spices, then hot smokes them over local river red gum, for heat, and German beechwood, for that rich smokiness and extra tang. Finally, he seals them in high-density plastic bags and slowly cooks them in a water bath in their own juices for over 12 hours to make the most delicious, sweet, juicy, and tender hams with deep brown skin.

These are whole leg hams on the bone and range from 5.5kg - 10kg+. Available in different weights, on the bone, these hams are perfect for slicing cold and serving with jelly and gravy or slathering in your favourite glaze and roasting again for a joyous glazed Christmas ham.

Orders are now open. Because our hams are from free-range pigs, the weights will vary so to make sure you get the best value, you will be asked to let us know the approximate weight of the ham you prefer. The price for our full-leg bone-in hams is $32.99 per kilo. A $150 deposit is required upon ordering. Then, in the weeks before delivery, we will email or call you to advise the exact weight of your ham and take the final payment.

Please note that Christmas orders will only be available for delivery from the week commencing Monday 16th December. Upon ordering, you can choose which week you wish your ham delivered or the date you wish to collect from our Daylesford store. Please place all Christmas orders separately. Any orders containing Christmas products will be delivered as part of your Christmas Order. All Christmas Orders will close Sunday 8th December if not sold out prior.
