This is the prized roast of all beef. The eye fillet is a muscle that doesn’t do a lot of hard work. As such, it is incredibly tender and very lean with a delicate beef flavour. It can be roasted whole for a truly marvellous dish, as a Beef Wellington or even sliced paper-thin for beef carpaccio. Alternately buy a whole fillet as an economical way to buy eye fillet steaks and cut them to your preferred thickness.
