OPERATIONS MANAGER - SENIOR BUTCHER

Help lead the next chapter of one of Victoria's leading paddock-to-plate butcheries.

Working alongside our current Store Manager during a planned transition, you'll have the opportunity to learn every aspect of the business before stepping into a senior leadership role.

The Daylesford Meat Co. is one of Victoria's leading regional butcheries.

We're proud to be a third-generation family business with our own farms in nearby Malmsbury and at the foot of Mt Macedon. From paddock to plate, everything we do is driven by quality, integrity and a genuine love of exceptional food.

Today our business extends well beyond the traditional butcher shop. Alongside our retail store, we supply some of Victoria's finest restaurants, deliver premium meat across the state and continue to develop award-winning smallgoods and ready-made meals using locally sourced ingredients whereverg possible.

About the Role

This role combines operational leadership with premium butchery.

Working closely with ownership, you'll oversee the daily operation of the business while supporting and developing a passionate team.

Your responsibilities will include:

  • Leading and mentoring the retail and butchery team.

  • Managing daily store operations.

  • Inventory management, stock ordering and stocktakes.

  • Monitoring product performance and minimising waste.

  • Pricing and gross profit management.

  • Maintaining exceptional merchandising and retail presentation.

  • Delivering outstanding customer service.

  • Supporting wholesale and online operations.

  • Maintaining food safety and compliance.

  • Working closely with management and marketing to continually improve the business.

About You

We're looking for someone who enjoys responsibility and leads by example.

Ideally you'll bring experience in:

  • Premium butchery or food production

  • Team leadership

  • Inventory and stock management

  • Retail operations

  • Customer service

  • Pricing and margin management

  • Food safety

  • Wholesale or premium food environments
